A spicy twist on a an old family favorite
Ingredients
- 1 medium onion, chopped
- 1 cup sliced celery
- 1 cup sliced carrots
- 1 tablespoon vegetable oil
- 4 cups water
- 3 cubes spicy chicken flavored bouillon
- 1 teaspoon Cajun seasoning
- 1 can (8-count size) refrigerated jumbo biscuits
- 2 cans (5-ounce size) chunk breast of chicken
- 1 can (10¾-ounce size) cream of chicken soup undiluted
Instructions
- Place onion, celery, and carrots in large Dutch oven, then sauté for 5-8 minutes or until tender.
- Add water, bouillon cubes and Cajun seasoning; bring mixture to a boil.
- Separate biscuits and cut into 6 wedges each; add biscuits wedges to pan then cover. Reduce heat and simmer for 8 minutes.
- Add chicken and soup.
- Cook for or 4 more minutes until heated thoroughly.

I live in Texas and here’s some of the sides we eat with spicy chicken. Baked beans or just red beans, clesloaw, corn-on-the-cob, dirty rice (rice with onion and green bell pepper), some kind of greens (turnip, mustard, collard, Hopping John ( black-eyed-peas with onion and green bell pepper, and cornbread.
