Cajun Chicken & Dumplings

A spicy twist on a an old family favorite
  • 1 medium onion, chopped
  • 1 cup sliced celery
  • 1 cup sliced carrots
  • 1 tablespoon vegetable oil
  • 4 cups water
  • 3 cubes spicy chicken flavored bouillon
  • 1 teaspoon Cajun seasoning
  • 1 can (8-count size) refrigerated jumbo biscuits
  • 2 cans (5-ounce size) chunk breast of chicken
  • 1 can (10¾-ounce size) cream of chicken soup undiluted

  1. Place onion, celery, and carrots in large Dutch oven, then sauté for 5-8 minutes or until tender.
  2. Add water, bouillon cubes and Cajun seasoning; bring mixture to a boil.
  3. Separate biscuits and cut into 6 wedges each; add biscuits wedges to pan then cover. Reduce heat and simmer for 8 minutes.
  4. Add chicken and soup.
  5. Cook for or 4 more minutes until heated thoroughly.

  1. OMG! This recipe looks awesome!!! :P ~ just from the picture alone is enough to make me drool.

    • I live in Texas and here’s some of the sides we eat with spicy chicken. Baked beans or just red beans, clesloaw, corn-on-the-cob, dirty rice (rice with onion and green bell pepper), some kind of greens (turnip, mustard, collard, Hopping John ( black-eyed-peas with onion and green bell pepper, and cornbread.
