Rusty Taco: New Restaurant Coming Soon!

InParisTexas had a chance to interview Carrie Bethea who is one of the people responsible for bringing a new Mexican sensation to Paris, Texas called Rusty Taco. Rusty Taco was voted the “BEST TACO” in Dallas, Texas and soon Parisians will be able to enjoy them here.  Carrie and her husband Earl owned Burgerland before this opportunity presented itself. Here is what Carrie had to say about the new restaurant coming to Paris, Texas.

IPT: What is Rusty Taco?

Carrie Bethea: Rusty Taco is a Dallas based franchise started by Russell ‘Rusty’ Fenton in an old garage. Check out their website for full bio, therustytaco.com, they were voted Dallas’ best taco!

 

IPT: What kind of menu items will you have?

Carrie Bethea: Our menu is super simple-Mexican ‘street’ tacos, chips, salsa, guacamole, and queso. We make everything in house, except our tortillas. We will also serve beer and margaritas. We will have a kids menu as well but are still working on that. We will also have outdoor seating on our covered patio!

IPT: When do you plan to open?

Carrie Bethea: We hope to be open by the middle of October.

IPT: How many jobs will Rusty Taco bring to Paris?

Carrie Bethea: We will hire probably 25+ to start out with but will likely employ around 20-25. We will be open 7 days a week for breakfast, lunch and dinner.

IPT: Where will Rusty Taco be located in Paris?

Carrie Bethea: We will be located in Paris Towne Center in the new building currently under construction. We will occupy 2 spaces on the south end. And yes, we will have a drive thru!

IPT: You used to own Burgerland. What made you go with Rusty Taco?

Carrie Bethea:  We loved our time at Burgerland and still enjoy going there for a great burger! This was an opportunity that presented itself to us; we didn’t really go looking for it. We felt like it was a great chance to bring something to Paris that we don’t already have. We like that it’s different, but not ‘different’. Does that make any sense? The food is just incredibly fresh, the prep work every day is just insane! But it’s so worth it because it really comes through in the food. And we also felt like the price point ($2 tacos), outdoor seating, and location option was perfect for Paris. We also like that we offer healthier food options, including a vegetarian and black bean taco. So, a lot of reasons I guess! None of them bad though! We are really looking forward to getting this open. We love the customer side of business-seeing and catching up with old customers and meeting new ones. Great customer service has, and always will be, our number 1 priority.
We will update our Facebook page when and where we’ll be taking applications. Right now I’m not sure.
